Happy Foodie Friday to you all! This week I decided to get us in on a little chicken roasting action. I know what you’re thinking, what the heck is so exciting about a salad with chicken? Well…nothing really, but this salad has some surprises up its sleeve that makes it a special win.
First off, the chicken is coated with this Italian seasoning. Have you heard of this stuff??? It’s all of my favorite spices combined into one glorious concoction. There’s basil, oregano, garlic, rosemary, thyme,…sugar, spice, and everything nice lol. It’s so aromatic that you experience a symphony of flavors while you chew.
Then there is lightly breaded parmesan, mozzarella, and panko crusted zucchini for a textural difference. I love the zest of parmesan in this salad. I normally find eating raw spinach difficult for it’s lack of flavor. The parm delivers the extra help I need raw spinach to have in order to make it enjoyable.
