Happy Foodie Friday!!! This week I’m featuring a copy cat rendition of a salad I had that was sooooo good I actually recreated it at home. Hubby doesn’t always get excited about salad, but this one, he has actually requested after trying it the first time.
This is a BJ’s Brewhouse recreation of their Roasted Portobello Mushroom and Asparagus Salad with Chicken (I added the chicken 😊). It’s a very simple and yet filling dish. Take crisp spring mix greens and load in the roasted veggies. I love the earthiness of Portobellos, plus they are meaty so it helps the salad fill one up.
It’s topped with goat cheese for a nice gamey tang and cranberries that give the slight tart contrast that marries well with this dish. I chose to grill up some balsamic glazed chicken thighs and doubled the balsamic as the dressing. The chicken is optional of course, but us carnivores love our meat every once in a while. And then the final touch is a sprinkle of roasted pumpkin seeds. Strangely enough, the seeds taste a lot like sunflower seeds so either do the job I’m sure.
Well there you have it! A copy cat version of a salad so great, I actually brought it into the house lol!!!
