Happy Foodie Friday!!!!! It’s been a while and I’d like to kick this Friday off with breakfast for dinner.

Potatoes, YES!!! Crispy and filling. Bacon, absolutely! Who doesn’t love some good ole smokey turkey bacon? Tomatoes? Why not!! They’re tangy and tart and bust in flavor with this recipe (I always use cherry tomatoes). Eggs, you better work! A nice sunny side up egg to weld it all together.
The great thing about this dish besides it being simple to make is if you bake it in a pan you can have plenty of leftovers for actual breakfast the next day 😆. Until next week, happy eating 😋
