
Happy Foodie Friday!!! It’s been a loooooong time since I’ve posted something for a Foodie Friday. I still make food, but my recipe backlog is crazy long so I’ll just start from my most recent tried recipe. This one comes from Kitchen Confidante. Let’s jump into this yummy dish!
In the last few years I’ve become increasingly more interested in fish outside of my normal go to’s like salmon and tuna. My mother in law periodically graces me with free fish through a subscription service she’s apart of so it gives me a chance to be adventurous in what dishes I make.
This time I was looking for a recipe that was simple in ingredients and complimentary to the halibut. Enter the original recipe from kitchenconfidante.com Halibut with Olives and Tomatoes (*side note* I didn’t have olives handy so I left them off of this dish) but, it turned out great just the same.
Halibut is a pretty mild fish in my opinion. It’s meaty and perfect with a little salt and pepper. The medley a top is comprised of red onion which adds a sweet assertive backing to the poppy acidic tomatoes. I chose a side of asparagus to finish it off and I’m happy to report this dish was all delight! It was light, clean, and easy to enjoy.
Maybe you’ll give it a try. I can easily see the medley topping being useful for other white fish dishes as well. Next time I’ll have to try it with the olives for an even more dimensional bite!
