Happy Foodie Friday!!! This week I’m featuring a copy cat rendition of a salad I had that was sooooo good I actually recreated it at home. Hubby doesn’t always get excited about salad, but this one, he has actually requested after trying it the first time.
This is a BJ’s Brewhouse recreation of their Roasted Portobello Mushroom and Asparagus Salad with Chicken (I added the chicken 😊). It’s a very simple and yet filling dish. Take crisp spring mix greens and load in the roasted veggies. I love the earthiness of Portobellos, plus they are meaty so it helps the salad fill one up.
It’s topped with goat cheese for a nice gamey tang and cranberries that give the slight tart contrast that marries well with this dish. I chose to grill up some balsamic glazed chicken thighs and doubled the balsamic as the dressing. The chicken is optional of course, but us carnivores love our meat every once in a while. And then the final touch is a sprinkle of roasted pumpkin seeds. Strangely enough, the seeds taste a lot like sunflower seeds so either do the job I’m sure.
Well there you have it! A copy cat version of a salad so great, I actually brought it into the house lol!!!
Til next time, merry eats!!
Happiest Foodie Friday!!!! Today I restart my foodie posts with a Hawaiian inspired dish of Poke. Since raw fish is off the menu for the next 3 months for me, I decided to improvise with a little twist on this enjoyable classic.
I started with a healthy helping of brown jasmine rice, layered with seaweed paper, avocado, cucumber, red onions and green onion. Instead of using raw tuna, I added cooked shrimp to my bowl and topped with a sprinkle of sesame oil and soy sauce.
The meatiness of the shrimp gave it a familiar “sushi-like” texture. We especially enjoyed the aroma of sesame oil that floats over the bowl helping bring the whole dish together. Even if you’re not pregnant, this dish is a dish!!!!!
Til next week, happy eating 😊
Happiest Foodie Friday to you all! This week I am excited to share a lovely vegetarian dish that I found online. It’s called a Spicy Kale and Coconut Stir Fry compliments of Cookieandkate.com.
I LOVE spicy food! Not like, to tears spicy, but a nice roll of heat in the senses is always a nice addition to a dish. This one totally delivered. It’s a easy stir fry with egg, kale, brown rice (I used wild rice), coconut flakes, all topped with cilantro and a kick of lime.
The Kale is beautifully steamed and adds some texture; very earthy in tone. The surprise in this dish is the coconut flakes. It brings in a crunch and the most subtle coconut flavor that is a perfect hint to say “I’m here” without taking over. It’s nice and filling without overwhelming the tummy.
Hubby and I really enjoyed this dish. We ate it all lol! I think I will be making this a part of my monthly cooking regime. Until next time, happy eating 😀 !!!
Happy Foodie Friday!!!! The whole month of Sept we have been eating vegan. No dairy, no meat…NO MEAT (it’s soooooo hard lol).
So this time I decided to go simple and make us a vegan grill cheese. The bread is a delicious Duomo bread I got from Central Market. The cheese was a Follow Your Heart Brand cheddar and mozzarella style substitute.
I must say, it was challenging to get the cheese to melt. We still ate it, BUT we actually ended up really liking the bread and soup more than the vegan cheese. Of the cheeses, I preferred the mozzarella over the cheddar due to its more muted flavor. Not every Foodie Friday dish makes our top list and this one suffered on account of our lack of vegan refined pallets. But that still doesn’t stop us from having tons of fun.
Hope you enjoy your Friday and whatever meal you chose to eat 😉. Til next time, happy eating!
Wow!! This looks like fried rice, has the texture of fried rice…even tastes somewhat similar to fried rice, but guess what??? It’s not lol!
This past Foodie Friday hubby broke out the food processor to cook us up a delicious paleo style dish. The fried rice is composed of cauliflower (of course) carrots, mushrooms, green onions, and zucchini. It has a nice spice of turmeric which also gives it the yellow look of a “mock egg”.
Surprisingly it did taste similar to a fried rice. Now that could be on account I haven’t had fried rice in a while, or the texture way playing tricks on me, but by the end of the meal my dish was empty! He got this recipe from a paleo cookbook my sister owns so I don’t have the exact recipe available. I’ll have to see what I can attempt to try next week to step my game up on hubby! ‘Til next week, happy eating 😋
Hello fellow Foodies! Happy Foodie Friday to you!! This weeks featured dish is another Hello Fresh recipe. It’s a moist Cod Filet with lemon and garlic flavors held hostage inside lol! The fish literally melts in your mouth and the flavors pair oh so nicely. Finished with a fresh arugula salad and a side of roasted yukon potatoes with red bell peppers! This one is a win in my book. And it was simple to make 😀 ‘Til next time, happy eating!!!

This Foodie Friday is brought to you by my good friend STEAK! We really enjoy steak in this household. Say the word and we come running lol. And speaking of words, do you know what the heck “tagliata” means?? It’s “cutting” or “cut” in Italian. Sounds much cooler that saying “cut steak” lol! It’s Friday again already?? Happy Foodie Friday! This go around I chose for us to have a medley of raw and lightly cooked veggies along side some delicious smoked salmon. It’s nice to take a break from tons of cooking and from any heavy eating that has been accumulating during the week.
