Happy Foodie Friday!!! Eating veggies is super easy with this recipe from Honeyed Home. It’s jam packed with a medley of mushrooms, bell peppers, scallions, and jalapeños for a spice kick.
The only thing I didn’t make was the crust (I’m 9 mos prego, there’s no way I’m making pizza dough lol). No worries though because I love to sub it with one of my favorites, Naan original bread. It can be found hanging out in mostly any deli and it tastes AMAZING!
The veggies are so fresh and accommodating with this pizza. The mushrooms almost taste sausage like with a sprinkle of salt and pepper when sautéed. I also used some fresh tomato sauce that my youngest sister made from scratch right from their garden and let me tell you, it is one of my favorite parts of the whole meal! It’s sweet and acidic just like I like. Unfortunately it’s not available in store, but I’m sure any marina will work for this dish.
This pizza was gone in minutes! I almost forgot to take a picture because it was so good. I had to snag hubbies plate so that’s why it’s missing a slice. Point proven lol!! Until next week, happy eating 😊
Happy Foodie Friday!!! Today my sweet hubs helped me make us a delicious Mexican meal. We had fish tacos courtesy of recipe found on delish.com.
I usually use tilapia as my fish of choice. But this time I decided to go with a nice piece of flounder. A whole host of Mexican spices go into marinading this flakey white fish.
We may have gotten a little carried away with our sides. Hubs made us fresh guacamole and pico de gallo. To top it off, we added a nice crunch of purple cabbage to texturize our tacos.
For sides it was a simple Mexican rice and Mexican Street Corn mixture. Overall a very tasty and satisfying dish. Until next time Happy Foodie Friday!!!

Happiest Foodie Friday to you all! This week I am excited to share a lovely vegetarian dish that I found online. It’s called a Spicy Kale and Coconut Stir Fry compliments of Cookieandkate.com.
I LOVE spicy food! Not like, to tears spicy, but a nice roll of heat in the senses is always a nice addition to a dish. This one totally delivered. It’s a easy stir fry with egg, kale, brown rice (I used wild rice), coconut flakes, all topped with cilantro and a kick of lime.
The Kale is beautifully steamed and adds some texture; very earthy in tone. The surprise in this dish is the coconut flakes. It brings in a crunch and the most subtle coconut flavor that is a perfect hint to say “I’m here” without taking over. It’s nice and filling without overwhelming the tummy.
Hubby and I really enjoyed this dish. We ate it all lol! I think I will be making this a part of my monthly cooking regime. Until next time, happy eating 😀 !!!
So this time I decided to go simple and make us a vegan grill cheese. The bread is a delicious Duomo bread I got from Central Market. The cheese was a Follow Your Heart Brand cheddar and mozzarella style substitute.
I must say, it was challenging to get the cheese to melt. We still ate it, BUT we actually ended up really liking the bread and soup more than the vegan cheese. Of the cheeses, I preferred the mozzarella over the cheddar due to its more muted flavor. Not every Foodie Friday dish makes our top list and this one suffered on account of our lack of vegan refined pallets. But that still doesn’t stop us from having tons of fun.

Wow!! This looks like fried rice, has the texture of fried rice…even tastes somewhat similar to fried rice, but guess what??? It’s not lol!
This past Foodie Friday hubby broke out the food processor to cook us up a delicious paleo style dish. The fried rice is composed of cauliflower (of course) carrots, mushrooms, green onions, and zucchini. It has a nice spice of turmeric which also gives it the yellow look of a “mock egg”.
Surprisingly it did taste similar to a fried rice. Now that could be on account I haven’t had fried rice in a while, or the texture way playing tricks on me, but by the end of the meal my dish was empty! He got this recipe from a paleo cookbook my sister owns so I don’t have the exact recipe available. I’ll have to see what I can attempt to try next week to step my game up on hubby! ‘Til next week, happy eating 😋
Hello fellow Foodies! Happy Foodie Friday to you!! This weeks featured dish is another Hello Fresh recipe. It’s a moist Cod Filet with lemon and garlic flavors held hostage inside lol! The fish literally melts in your mouth and the flavors pair oh so nicely. Finished with a fresh arugula salad and a side of roasted yukon potatoes with red bell peppers! This one is a win in my book.
