I know I know, we’ve been eating a lot of Dallas food lately, but this one was a surprise birthday gathering for my sister. After tasting the food I deem it worthy of the hour long trip it takes us Fort Worthians to get there lol!
Wow!! This looks like fried rice, has the texture of fried rice…even tastes somewhat similar to fried rice, but guess what??? It’s not lol!
This past Foodie Friday hubby broke out the food processor to cook us up a delicious paleo style dish. The fried rice is composed of cauliflower (of course) carrots, mushrooms, green onions, and zucchini. It has a nice spice of turmeric which also gives it the yellow look of a “mock egg”.
Surprisingly it did taste similar to a fried rice. Now that could be on account I haven’t had fried rice in a while, or the texture way playing tricks on me, but by the end of the meal my dish was empty! He got this recipe from a paleo cookbook my sister owns so I don’t have the exact recipe available. I’ll have to see what I can attempt to try next week to step my game up on hubby! ‘Til next week, happy eating 😋
Hello fellow Foodies! Happy Foodie Friday to you!! This weeks featured dish is another Hello Fresh recipe. It’s a moist Cod Filet with lemon and garlic flavors held hostage inside lol! The fish literally melts in your mouth and the flavors pair oh so nicely. Finished with a fresh arugula salad and a side of roasted yukon potatoes with red bell peppers! This one is a win in my book. And it was simple to make 😀 ‘Til next time, happy eating!!!
It’s Friday again already?? Happy Foodie Friday! This go around I chose for us to have a medley of raw and lightly cooked veggies along side some delicious smoked salmon. It’s nice to take a break from tons of cooking and from any heavy eating that has been accumulating during the week.
Happy Foodie Friday! “How is it possible to have ALMOST Vegan Nachos??” you might be asking yourself. Well, for the month of July, one of us (not me) has decided to eat only fruits, vegetables, fish and whole grains. What makes these nachos not completely vegan is the ground turkey I put on mine LOL!
This is the first time I’ve thrown together a soup and I’m souper proud of how it came out lol. I LOVE soup!! Me and soup be like…well we would be bffs if it was a human. My hubby doesn’t understand my soup obsessions either. I eat soup in ALL seasons. Don’t sleep on some good soup (#Amys).
This dish is full of flavor. It took an hour to make, but it’s worth it for that reason. Broth to veggies and meat ratio is crucial when making a hearty bowl o goodness. Dare I say everything outside of the title helped bring this recipe home; the carrots (to which I used a colorful medley of purple and white carrots, not just orange). Plenty of shallots, a #dab of garlic powder, and a fresh chop of red bell pepper.
This recipe compliments of Giada De Laurentiis. I will be making more of her dishes again. Cheers!!
