Marinated Steak Bimbimbap with Zucchini, Mushrooms, and Pickled Scallions

This dish is as fun to eat as it is to say LOL! Steak, YES!…..Egg YES!….Mushrooms….YES, YES, YES!!! Another Hello Fresh masterpiece. Tender steak over a bed of crunchy veggies and rice. Then just a dab of sriracha to top it off. And I have to say, all this time I have been trying to figure out what to do with the whites of scallions. Duh! PickleĀ them in some vinegar LOL! Marinated Flank Steak with Roasted Broccoli and Baked Potatoes

You would think in this type of dish the star would beĀ the steak. And while the steak was AMAZING, the broccoli actually stole the show (recipe here). It maintains its earthy tone while the parmesanĀ adds a niceĀ hint of sharpness. Pair with a full bodied Cabernet Sauvignon and you’re all set for an evening of foodie fun!
